The Società Agricola Carrino S.S. is a company with cereals, livestock and olive growing, which produces oil, pecorino cheese and wool. The oil is obtained from olives of the Ogliarola variety, harvested directly from the plant, in the farm’s olive grove of about 40 hectares. The cold pressing, the low acidity, the golden yellow color, the delicate aroma, the exceptional flavor, are the salient features of the extra virgin olive oil branded "Pavoni".
The company also produces organic PDO oil and organic olive oil, rich in polyphenols, vitamins A and E, antioxidant substances. The pecorino cheese, basket of “fossa granaia”, is produced exclusively from sheep’s milk and at the end of a maturation that lasts from three to eighteen months. This process takes place in the pits where wheat was once kept, which give the cheese a unique scent and flavor, due to the mold present and the scarcity of oxygen. From the wool of the sheep raised on the farm, of the valuable breed “Gentile di Puglia”, we produce high quality sweaters and blankets, distinguished by natural colors.
