Cacioricotta Caprino Orsarese
Cacioricotta caprino orsarese is a cheese of ancient traditions, produced exclusively at a family level in the countryside of the municipality of Orsara.
It is produced with goat’s milk of mixed specimens of Gargano breeds raised in the wild and fed with only wild herbs of the area. It has a pear shape, a weight of about 400 grams, with a thin crust and a straw color. The paste is white, compact, tender and sweet.
The Cacioricotta caprino orsarese is usually enjoyed with bread or dessert with a little honey or vincotto. It can also be served between appetizers. The more seasoned one can be used to season pasta.
