N’nogghj di Pietramontecorvino
The n'nogghj (in petraiolo) is a thin sausage, with an arched shape and red color.
Like many of the culinary delicacies of the Monti Dauni, noglia has poor origins: it was a sausage obtained from the less noble parts obtained from the slaughter of pigs, such as tripe and guts. A sausage for the poor.
The typical U-shape is due to the drying of the noglia on reeds, while the color access to the use of spices such as chili.
