Maiale Nero dei Monti Dauni
Attested the presence of this species already in the '700 its specimens are characterized by some physiological peculiarities: the sharp and long muzzle, the ears carried horizontally forward, the limbs well developed and muscled and of course the dark colour of the bristles.
The black pig is raised in the wild and feeds mainly on acorns, wild herbs and fruit. The meat is particularly lean and tasty; in addition to being used for the preparation of tasty main courses, it is the basis of the tradition of Monti Dauni sausages.
From black pig in fact are obtained: ham and lard of Faeto, sausages and soppressate, capocolli and bacon.
