Pancotto
It is a real delicacy of poor cuisine that comes from the need not to waste a primary good like bread.
In fact, the main ingredient is stale bread, seared in boiling water and seasoned with vegetables and fried with oil, garlic and chilli.
The use of spontaneous vegetables is varied and in the pancotto you can find rocket, marasciuoli, borragine, fennel, turnip tops or even "ammishck leaves", overo a mixture of wild vegetables, depending on the season or taste.
In more robust versions you can also find potatoes and beans.
