Pane di Ascoli Satriano
Bread is a fundamental element of the table of the Monti Dauni. There is excellent quality in all the villages.
However, the bread of Ascoli Satriano, famous since ancient times, deserves an honorable mention.
This particular type of bread is obtained with the use of durum wheat semolina, biga sourdough, and warm salted water. The shape of the loaf is round and the traditional sizes are 2 and 5 kg; it has a crispy golden crust and sometimes brown and has a flavor easily recognizable, thanks to the use of the chariot (sour paste).
The goodness of Ascoli’s bread is testified even by the Latin poet Horace in one of his satires.
