Pane di Orsara di Puglia
Equipped with several ovens, Orsara boasts the presence of a straw oven of the sixteenth century still working.
The traditional loaves were of various kili (up to 5) and had this size because the families were once numerous and the bread remained fresh many days.
The housewives made the loaves at home and went to the oven only for cooking. To distinguish their loaves, they affected the shapes of symbols.
The bread baked in the straw oven today sees the use of a very old sourdough and is characterized by a thick crust and crispy.
