Taralli
They are one of the emblems of this land: the taralli. They are found in every oven, in a thousand variations and are a cornerstone of Apulian aperitifs.
Those typical of the Dauni Mountains are crispy oblong pasta rings made with soft wheat flour, olive oil, white wine, boiled and then baked.
The dough is often flavored with spices, including anise, and wild fennel seeds and chilli.
