The oven has two mouths: the upper one for cooking food and the lower one for burning straw.
The two levels are in communication with each other through a central hole on the hob called "hell" which allows the heat and flames to rise up in the upper part. The peculiarity is precisely the combustion that occurred with straw because, given the abundant availability of straw resulting from the cultivation of wheat and other cereals, waste products became a precious resource used as cheap fuel.
